Ingredients

  • 1 can (14.75 oz) salmon, drained and flaked
  • 3 cups diced potatoes
  • 1 cup corn kernels
  • 1/2 cup diced onion
  • 1/4 cup diced celery
  • 2 cups chicken or vegetable broth
  • 1 cup milk or half-and-half
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and celery and sauté until softened.

  2. Stir in the flour and thyme, and cook for a minute.

  3. Gradually whisk in the broth and milk, stirring constantly until smooth.

  4. Add the potatoes and corn, and bring the mixture to a simmer. Cook until the potatoes are tender.

  5. Stir in the salmon and season with salt and pepper.

  6. Heat through and serve hot.
