How To Make Russet Potato and Sausage Breakfast Casserole

A delicious breakfast casserole made with russet potatoes and sausage.

Ingredients

  • 4 medium russet potatoes, peeled and thinly sliced
  • 1 lb breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 8 large eggs
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F.

  2. Grease a 9×13 inch baking dish.

  3. Layer the potato slices and cooked sausage in the dish.

  4. Sprinkle the cheese over the top.

  5. In a separate bowl, whisk the eggs, milk, salt, and pepper together.

  6. Pour the egg mixture over the potato and sausage mixture.

  7. Bake for 45-50 minutes or until the egg is set in the middle.

  8. Let cool for a few minutes before serving.
