A refreshing and flavorful salad made with tender green beans and perfectly cooked russet potatoes.

Ingredients
- 1 lb. Russet potatoes, peeled and diced
- 8 oz. green beans, trimmed
- 1/4 cup red onion, diced
- 1/4 cup olive oil
- 2 tbsp. white wine vinegar
- 1 tsp. Dijon mustard
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions

In a large pot, boil potatoes in salted water until tender, about 12-15 minutes. Drain and set aside to cool.

In another pot, cook green beans by blanching in boiling water for 3-4 minutes. Drain and set aside to cool.

In a small bowl, whisk together olive oil, vinegar, Dijon mustard, garlic, salt, and pepper.

In a large bowl, combine cooled potatoes, green beans, and red onion. Drizzle the dressing over and toss gently to combine.

Serve cold or at room temperature.
