How To Make Loaded Russet Potato Skins Recipe
Cheesy and crispy potato skins loaded with bacon bits and green onions, a perfect appetizer or snack.

Ingredients
- 4 large russet potatoes
- 6 strips of bacon
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions

Preheat oven to 400°F.

Scrub and dry potatoes, then prick all over with a fork. Rub with olive oil and sprinkle with salt and pepper.

Bake for 45-50 minutes, or until potatoes are tender.

Fry the bacon until crispy, then crumble into small pieces.

Let the potatoes cool slightly before cutting them in half lengthwise. Scoop out the inside of each potato leaving about 1/4 inch of skin.

Brush each potato skin with olive oil, then sprinkle garlic powder and salt on top.

Divide the shredded cheese, crumbled bacon, and green onions among the potato skins.

Bake for another 15-20 minutes, or until cheese is melted and bubbly.
