Ingredients
- 4 large russet potatoes, sliced into rounds
- 2 tbsp olive oil
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 2 tbsp apple cider vinegar
- 1 tbsp dijon mustard

Preheat grill to medium heat.

In a large bowl, toss potato rounds with olive oil, salt, and black pepper.
