How To Make Za’atar & Herb Potato Latkes

Ingredients
- 4 large potatoes, peeled and grated
- 1 small onion, grated
- 1/4 cup all-purpose flour
- 2 tablespoons za’atar spice
- 1 tablespoon dried parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- Vegetable oil, for frying
Instructions

Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated potatoes, grated onion, flour, za’atar spice, dried parsley, garlic powder, salt, black pepper, and beaten eggs. Mix well until all ingredients are evenly combined.

Heat a generous amount of vegetable oil in a large frying pan over medium heat.

Take a heaping scoop of the potato mixture and shape it into a flat patty. Place the patty into the hot oil and flatten it slightly with the back of a spatula. Repeat with the remaining potato mixture, making sure not to overcrowd the pan.

Fry the latkes for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spatula to transfer the cooked latkes to a paper towel-lined plate to drain excess oil.

Serve the Za’atar & Herb Potato Latkes hot, garnished with additional za’atar spice if desired.
