Preheat the oven to 425°F (220°C).

In a large bowl, combine the potatoes, olive oil, garlic powder, dried thyme, dried rosemary, salt, and black pepper. Mix well to coat the potatoes evenly.

Transfer the potatoes to a baking sheet in a single layer.

Roast in the preheated oven for about 45 minutes, or until the potatoes are golden brown and crispy, flipping halfway through cooking.
