How To Make Greek Lemon Chicken and Potato Bake

Ingredients
- 4 chicken breasts, boneless and skinless
- 4 medium potatoes, cut into wedges
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 lemons, juiced and zested
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chicken broth
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried thyme, salt, and black pepper.

Add the chicken breasts to the bowl and coat them with the marinade.

In a separate bowl, toss the potato wedges with the remaining marinade.

Arrange the chicken breasts and potato wedges in a single layer in a baking dish.

Pour the chicken broth into the dish.

Bake for 45-50 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
