How To Make Buttered Jerseys

Ingredients
- 1.5 lbs Jersey potatoes
- 4 tbsp unsalted butter
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnish
Instructions

Scrub the Jersey potatoes well and cut them into bite-sized pieces.

Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt.

Bring the water to a boil over high heat, then reduce the heat to medium-low. Simmer the potatoes for about 10-15 minutes, or until they are fork-tender.

Drain the potatoes and return them to the pot.

Add the butter to the pot and season with salt and pepper to taste.

Gently toss the potatoes in the butter until they are fully coated.
