- 4 large potatoes
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1 cup bread crumbs
- Vegetable oil, for frying
Instructions

Peel the potatoes and cut them into small cubes. Boil them until tender, then drain and mash.

In a large bowl, mix the mashed potatoes with Parmesan cheese, parsley, salt, and black pepper.

Shape the mixture into small balls or cylinder shapes.

Dip each croquette into beaten eggs, then coat with bread crumbs.
