Ingredients
- 4 cups of diced potatoes
- 1 cup of diced pineapple
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 tbsp of jerk seasoning
- 1 tsp of salt
- 1/2 tsp of black pepper
- 2 tbsp of vegetable oil
- 1 tbsp of chopped fresh cilantro (optional)
Instructions

In a large skillet, heat the vegetable oil over medium heat.

Add the diced potatoes to the skillet and cook for 5 minutes, stirring occasionally.

Add the diced pineapple, onion, and garlic to the skillet, and cook for another 5 minutes, until the potatoes are golden and crispy.

Sprinkle the jerk seasoning, salt, and black pepper over the potato mixture, and stir to coat evenly.

Cook for an additional 5-7 minutes, until the flavors are well combined.

Remove from heat and sprinkle with chopped cilantro, if desired.
