- 4 large potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions

Preheat the oven to 425°F (220°C).

Peel the potatoes and cut them into small, evenly-sized cubes.

Place the potato cubes in a large pot of salted water and bring to a boil. Cook for about 5 minutes, until partially cooked.
