How To Make New Potato and Spinach Curry Recipe
A vegetarian dish with the goodness of spinach and hearty potatoes, cooked in a blend of Indian spices.
Serves:
Ingredients
- 500g new potatoes
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp grated fresh ginger
- 2 green chillies, sliced
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp turmeric powder
- 1/2 tsp chilli powder
- 200ml vegetable stock
- 200g fresh spinach
- Salt to taste
Instructions

Boil potatoes for 10 minutes until cooked. Drain and cut into halves.

Heat oil in a pan. Add onion, garlic, ginger, and green chillies. Sauté until onions turn translucent.

Add coriander, cumin, turmeric, and chilli powder. Stir and cook for a minute.

Pour in vegetable stock and let it simmer for 5 minutes.

Add in potatoes and let it cook for 10-15 minutes until the gravy thickens.

Now add in the fresh spinach and let it wilt down.

Add salt to taste and serve hot with rice or chapati.
