How To Make New Potato and Spinach Curry Recipe

A vegetarian dish with the goodness of spinach and hearty potatoes, cooked in a blend of Indian spices.

Preparation: 10 minutes

Total: 40 minutes

Serves:

Ingredients

  • 500g new potatoes
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp grated fresh ginger
  • 2 green chillies, sliced
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 200ml vegetable stock
  • 200g fresh spinach
  • Salt to taste

Instructions

  1. Boil potatoes for 10 minutes until cooked. Drain and cut into halves.

  2. Heat oil in a pan. Add onion, garlic, ginger, and green chillies. Sauté until onions turn translucent.

  3. Add coriander, cumin, turmeric, and chilli powder. Stir and cook for a minute.

  4. Pour in vegetable stock and let it simmer for 5 minutes.

  5. Add in potatoes and let it cook for 10-15 minutes until the gravy thickens.

  6. Now add in the fresh spinach and let it wilt down.

  7. Add salt to taste and serve hot with rice or chapati.
