- 1 lb new potatoes, washed and halved
- 3 tbsp unsalted butter, at room temperature
- 2 tbsp fresh dill, chopped
- Salt and pepper, to taste
Instructions

Place the potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are tender.

Drain the potatoes and return them to the pot.

Add the butter, dill, salt, and pepper to the potatoes and stir until the butter has melted and the potatoes are coated in the herb butter.
