Delicious and hearty frittata made with new potatoes and fresh chives.

Ingredients
- 8 new potatoes, thinly sliced
- 8 eggs
- 1/4 cup chopped chives
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions

Preheat oven to 375°F.

Heat olive oil in a 10” oven-safe skillet over medium heat.

Add potatoes and cook until tender, about 8 minutes.

While potatoes cook, whisk together eggs, chives, salt, and pepper.

Pour egg mixture over potatoes and stir gently to distribute evenly.

Cook over medium heat until the edges begin to set, about 3-5 minutes.

Transfer skillet to oven and bake for 12-15 minutes or until frittata is set in the middle.

Let cool for a few minutes before serving.
