Ingredients
- 4 large potatoes
- 3 tbsp vegetable oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Sprigs of fresh rosemary (optional)
Instructions

Preheat the oven to 425°F (220°C).

Peel the potatoes and cut them into evenly sized chunks.

Place the potatoes in a large pot of cold, salted water and bring to a boil. Cook for 10 minutes.

Drain the potatoes and return them to the pot. Shake the pot vigorously to roughen up the edges of the potatoes.

In a separate small bowl, mix together the oil, salt, black pepper, paprika, and garlic powder.

Pour the oil mixture over the potatoes and toss to coat evenly.

Transfer the potatoes to a large baking tray, spreading them out in a single layer.

Place the tray in the preheated oven and roast for 45 minutes, or until golden and crispy, turning once halfway through.

If desired, scatter fresh rosemary sprigs over the potatoes during the last 10 minutes of cooking time.

Remove from the oven and serve hot.
