Ingredients
- 1 lb pork tenderloin, cut into 1-inch cubes
- 4 medium-sized potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, combine the pork, potatoes, onion, garlic, dried thyme, paprika, salt, black pepper, and olive oil. Toss until everything is well coated.

Transfer the mixture to a baking dish and spread it out evenly.

Bake in the preheated oven for 40 minutes, or until the pork is cooked through and the potatoes are crispy.
