How To Make Sticky Pork & Pineapple Hotpot

Serves:
Ingredients
- 500g pork belly, sliced into bite-sized pieces
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup pineapple chunks
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- Spring onions, chopped for garnish
Instructions

In a bowl, combine the soy sauce, oyster sauce, honey, minced garlic, and cornstarch. Mix well.

Heat the vegetable oil in a large pot or wok over medium heat. Add the sliced pork belly and cook until browned and crispy. Remove from the pot and set aside.

In the same pot, add the sliced onion and bell peppers. Cook until slightly softened.

Add the pineapple chunks to the pot and cook for a couple of minutes.

Return the cooked pork belly to the pot and pour in the sauce mixture. Stir well to coat the ingredients.

Cover the pot and simmer for 1 hour, stirring occasionally.

Remove the lid and continue to simmer for another 30 minutes, or until the sauce has thickened and the pork is tender.

Season with salt and pepper, to taste.

Serve hot, garnished with chopped spring onions.
