How To Make Smoky Pork & Boston Beans One-Pot Recipe

Ingredients
- 1.5 lbs of pork shoulder, cut into chunks
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of Boston beans, soaked overnight and drained
- 1 cup of chicken broth
- 1 cup of water
- 1/4 cup of tomato paste
- 2 tbsp of brown sugar
- 1 tbsp of smoked paprika
- 1 tsp of dried thyme
- 1 tsp of salt
- 1/2 tsp of black pepper
Instructions

In a large pot, heat some oil over medium heat. Add the pork and brown it on all sides. Remove the pork from the pot and set it aside.

In the same pot, add the diced onion and minced garlic. Cook for 2-3 minutes until softened.

Add the soaked and drained Boston beans, chicken broth, water, tomato paste, brown sugar, smoked paprika, dried thyme, salt, and black pepper to the pot. Stir well to combine.

Return the browned pork to the pot. Bring the mixture to a boil, then reduce heat to low, cover the pot, and let simmer for 2 hours or until the pork and beans are tender.

Serve the smoky pork and Boston beans hot, garnished with chopped parsley if desired.
