How To Make Pork Schnitzel with Tomato & Caper Sauce

Ingredients
- 4 pork chops
- 1 cup bread crumbs
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 tbsp capers
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 cup fresh parsley, chopped
Instructions

Pound the pork chops to an even thickness.

In separate bowls, place flour, beaten eggs, and bread crumbs.

Season the flour with salt and black pepper.

Dip each pork chop in flour, then in the beaten eggs, and finally coat with bread crumbs.

Heat olive oil in a large skillet over medium-high heat.

Fry the breaded pork chops until golden brown on both sides, about 3-4 minutes per side.

Remove pork chops from skillet and set aside.

In the same skillet, add diced onion and minced garlic. Cook until softened.

Add diced tomatoes, capers, dried oregano, and dried basil.

Simmer the sauce for about 5 minutes, then add the pork chops and cook for another 2-3 minutes.

Sprinkle with fresh parsley before serving.
