- 1.2 kg (2.6 lb) pork loin joint
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tbsp fresh sage, finely chopped
- 1 tbsp fresh thyme, finely chopped
- 1 cup breadcrumbs
- 1 egg, beaten
- 2 large onions, sliced
- 4 apples, cored and halved
- 1 kg (2.2 lb) potatoes, peeled and cut into chunks
- 4 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

In a bowl, combine the chopped onion, minced garlic, sage, thyme, breadcrumbs, and beaten egg to make the stuffing mixture.

Butterfly the pork loin joint by slicing it horizontally, leaving one side attached. Open it like a book and spread the stuffing evenly over the inside.

Roll up the pork loin tightly and tie it with kitchen twine to secure.

Place the sliced onions in the roasting pan and place the stuffed pork loin on top. Season with salt and pepper.

Roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 63°C (145°F).

Meanwhile, toss the potatoes with olive oil, salt, and pepper. Spread them on a baking tray and roast in the oven for 1 hour, turning occasionally, until golden and crispy.

In the last 30 minutes of cooking, add the halved apples to the roasting pan with the pork.

Remove the pork from the oven and let it rest for 10 minutes before slicing.
