Ingredients
- 2 lb. boneless pork roast
- 1/2 cup dried cranberries
- 1 tbsp chopped fresh sage
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chicken broth
- 2 tbsp olive oil
Instructions

Preheat oven to 375°F.

Season pork roast with salt and pepper.

Heat olive oil in a skillet over medium-high heat. Sear the pork roast on all sides until browned.

In a small bowl, mix together cranberries, sage, garlic, and chicken broth.

Place the pork roast in a baking dish and brush with the cranberry mixture.

Cover the dish with foil and bake for 1 hour.

Remove foil and bake for an additional 30 minutes, or until the pork reaches an internal temperature of 145°F.
