How To Make Pork & Chickpea Curry
Pork is one of the most commonly cooked meats in the world and we’ve decided to put our spin into these minimal yet tasty pork recipes that will have you looking forward to every bite.
Serves:
Ingredients
- 1.5 lbs pork, cubed
- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- 1 can diced tomatoes
- 1 cup coconut milk
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the pork and sauté until browned on all sides. Remove from the pot and set aside.

In the same pot, add the onion, garlic, and ginger. Sauté until the onion is softened and translucent.

Add the curry powder, turmeric, cumin, coriander, and chili powder to the pot. Stir well to coat the onions and spices.

Pour in the diced tomatoes and coconut milk. Stir to combine.

Return the pork to the pot and add the chickpeas. Season with salt and pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let simmer for about 30 minutes, or until the pork is cooked through and tender.

Adjust the seasoning if necessary.

Serve the pork and chickpea curry over steamed rice or with naan bread. Garnish with fresh cilantro.
