How To Make Pea & Ham Soup

Ingredients
- 1 lb ham hock
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 cups green peas, fresh or frozen
- 4 cups chicken broth
- 1 bay leaf
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot, add the ham hock, chopped onion, and minced garlic. Cover with water and bring to a boil. Reduce heat to a simmer and cook for 1 hour.

Remove the ham hock from the pot and shred the meat. Set aside.

Add the green peas, chicken broth, and bay leaf to the pot. Bring to a boil and then reduce heat to a simmer. Cook for 30 minutes, or until the peas are tender.

Remove the bay leaf from the pot. Use an immersion blender to puree the soup until smooth.

Return the shredded ham to the pot and simmer for an additional 10 minutes to heat through. Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley.
