How To Make Herb Roast Pork with Vegetable Roasties & Apple Gravy

Serves:
Ingredients
- 1.5 kg pork loin
- 2 tbsp olive oil
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh rosemary, chopped
- Salt and pepper to taste
- 500g baby potatoes, halved
- 2 carrots, peeled and cut into chunks
- 1 red onion, cut into wedges
- 2 cooking apples, peeled, cored, and sliced
- 500ml apple juice
- 2 tbsp cornstarch
Instructions

Preheat the oven to 180°C (350°F).

Rub the pork loin with olive oil, chopped thyme, rosemary, salt, and pepper.

Place the pork in a roasting pan and roast for 1 hour, or until the internal temperature reaches 63°C (145°F).

In a separate roasting pan, toss the baby potatoes, carrots, and red onion with olive oil and season with salt and pepper. Roast for 40 minutes, or until the vegetables are golden and crispy.

In a saucepan, combine the sliced apples and apple juice. Simmer for 10 minutes, or until the apples are soft.

In a small bowl, mix the cornstarch with a little water to make a slurry. Add the slurry to the apple mixture and cook until thickened, stirring constantly.

Remove the pork from the oven and let it rest for 10 minutes before slicing.

Serve the herb roast pork with the vegetable roasties and apple gravy.
