Ingredients
- 4 medium-sized potatoes, peeled and diced
- 1/2 lb chorizo sausage, casings removed and crumbled
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/2 cup mayonnaise
- 2 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 green onions, thinly sliced
Instructions

Preheat your grill to medium-high heat.

In a large pot, boil the diced potatoes until they are fork-tender. Drain and let cool.

While the potatoes are cooling, cook the crumbled chorizo sausage in a skillet over medium heat until browned and cooked through. Remove from heat and set aside.

In a large bowl, combine the cooked potatoes, chorizo sausage, red onion, and red bell pepper.

In a small bowl, whisk together the mayonnaise, dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper. Pour this dressing over the potato mixture and gently toss to coat.

Transfer the potato salad to a grill-safe dish and place it on the preheated grill. Cook for 10 minutes, stirring occasionally, until the potatoes are slightly charred and the flavors have melded together.
