Ingredients
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 4 cups potatoes, peeled and diced
- 2 cups savoy cabbage, shredded
- 1 teaspoon thyme
- Salt and pepper to taste

In a large pot, cook the bacon over medium heat until crispy. Remove bacon from pot and set aside, leaving the bacon fat in the pot.

Add the onion and garlic to the pot and sauté until softened.

Pour in the broth and bring to a boil.

Add the diced potatoes, shredded cabbage, thyme, salt, and pepper to the pot. Reduce heat and simmer for about 30 minutes, or until the potatoes are tender.

Use an immersion blender to partially blend the soup, leaving some chunky texture.

Serve the soup hot, garnished with the crispy bacon bits.
