How To Make Quinoa and Bacon Salad
A savory salad packed with protein and flavor.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups water
- 6 slices bacon, diced
- 1 red onion, diced
- 1 red bell pepper, diced
- 1/4 cup chopped parsley
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions

Rinse quinoa and add to a pot with the water. Bring to a boil and let simmer for 20 minutes.

Cook bacon in a pan until crispy. Remove bacon and set aside, leaving the bacon grease in the pan.

In the same pan, sauté onion and bell pepper until tender.

In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.

In a large bowl, combine cooked quinoa, bacon, sautéed vegetables, parsley, and dressing. Mix well.

Serve the salad at room temperature or chilled.
