How To Make Mushroom and Spinach Stroganoff

Ingredients
- 12 oz of pasta
- 2 tbsp of butter
- 1 small onion, diced
- 3 cloves of garlic, minced
- 8 oz of sliced mushrooms
- 2 cups of fresh spinach
- 2 tbsp of flour
- 1 cup of vegetable broth
- 1/2 cup of sour cream
- Salt and pepper to taste
- Fresh parsley to garnish
Instructions
- Cook pasta according to package instructions.
- In a large pan, melt butter over medium heat. Add onions and garlic, sauté for 2 minutes.
- Add mushrooms and spinach, cook until mushrooms release their liquid and spinach is wilted.
- Sprinkle flour over veggie mixture and stir to combine.
- Pour in vegetable broth slowly while whisking to prevent lumps from forming.
- Reduce heat to low and stir in sour cream. Season with salt and pepper to taste.
- Serve over cooked pasta and garnish with fresh parsley.
