How To Make Mushroom and Parmesan Polenta

A creamy polenta dish topped with sautéed mushrooms and grated Parmesan cheese.

Serves:

Ingredients

  • 1 cup cornmeal
  • 4 cups water
  • 1 tsp salt
  • 2 tbsp butter
  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a pot, bring water and salt to a boil.
  2. Slowly whisk in cornmeal and reduce heat to low, stirring constantly for 30 minutes.
  3. In a separate pan, sauté sliced mushrooms and minced garlic with butter until cooked through.
  4. To serve, spoon polenta into bowls, top with sautéed mushrooms, Parmesan cheese and season with salt and pepper to taste.
