- 4 bell peppers, halved and seeded
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb mushrooms, sliced
- 4 oz goat cheese, crumbled
- 1/4 cup breadcrumbs
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F.

Place the bell pepper halves in a baking dish and set aside.
