How To Make Oyster Mushroom and Swiss Chard Frittata
A savory frittata with earthy oyster mushrooms and nutrient-rich swiss chard.

Ingredients
- 8 large eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 large onion, diced
- 2 garlic cloves, minced
- 4 cups oyster mushrooms, sliced
- 4 cups Swiss chard, chopped
- 1/4 cup Parmesan cheese, grated
Instructions

Preheat oven to 350°F (175°C).

Whisk eggs with salt and pepper.

In a large oven-safe skillet, heat olive oil over medium heat.

Add onion and garlic, cook until onion is soft.

Add oyster mushrooms and cook until golden brown.

Add Swiss chard and cook until wilted.

Pour egg mixture over vegetables, cook until the outer edge of the frittata is set.

Sprinkle Parmesan cheese over the top.

Transfer skillet to preheated oven and bake for 10-15 minutes until eggs are cooked through and cheese is golden brown.

Remove from oven, slice, and serve.
