How To Make Oyster Mushroom and Sesame Noodle Salad
This refreshing salad is packed with earthy oyster mushrooms, tender noodles, and a nutty sesame dressing.
Serves:
Ingredients
- 8 oz oyster mushrooms, sliced
- 8 oz soba noodles
- 1 cup edamame
- 1/4 cup sesame oil
- 1/4 cup rice vinegar
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 1 tbsp toasted sesame seeds
- Salt and pepper, to taste
Instructions

Cook soba noodles according to package instructions. Drain and rinse with cold water.

In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, ginger, garlic, sesame seeds, salt, and pepper to make the dressing.

In a pan over medium heat, sauté oyster mushrooms until tender and golden brown.

In a large bowl, add cooked noodles, sautéed mushrooms, and edamame. Pour the dressing over the salad and toss well to combine.

Serve the salad cold, with additional sesame seeds on top if desired.
