How To Make Oyster Mushroom and Quinoa Pilaf Recipe

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz oyster mushrooms, sliced
- 1 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley
Instructions

Rinse quinoa under running water. In a medium saucepan, bring quinoa and vegetable broth to a boil, then reduce heat and simmer covered for 15-20 minutes or until liquid is absorbed. Fluff with a fork and set aside.

In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté for 5-7 minutes until softened.

Add sliced oyster mushrooms, dried thyme, salt, and black pepper. Sauté for 5-7 minutes more until mushrooms are tender and slightly browned.

Add cooked quinoa to the skillet and stir to combine. Cook for 5 minutes more until heated through.

Garnish with chopped parsley before serving.
