How To Make Oyster Mushroom and Quinoa Pilaf Recipe

A savory and nutritious one-pan meal featuring earthy oyster mushrooms and protein-packed quinoa.

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz oyster mushrooms, sliced
  • 1 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley

Instructions

  1. Rinse quinoa under running water. In a medium saucepan, bring quinoa and vegetable broth to a boil, then reduce heat and simmer covered for 15-20 minutes or until liquid is absorbed. Fluff with a fork and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté for 5-7 minutes until softened.

  3. Add sliced oyster mushrooms, dried thyme, salt, and black pepper. Sauté for 5-7 minutes more until mushrooms are tender and slightly browned.

  4. Add cooked quinoa to the skillet and stir to combine. Cook for 5 minutes more until heated through.

  5. Garnish with chopped parsley before serving.
