How To Make Morel Mushroom Soup Recipe
A comforting bowl of hearty, earthy and creamy soup with the flavor of morel mushrooms in every bite.

Ingredients
- 1/4 cup unsalted butter
- 2 cups fresh morel mushrooms, cleaned and chopped
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1/4 cup flour
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper, to taste
Instructions

In a large pot, melt butter over medium heat. Add chopped onions and minced garlic and cook until onions are tender and garlic is fragrant.

Add chopped morel mushrooms and cook until mushrooms are soft and tender.

Sprinkle flour over vegetables and stir until all vegetables are coated. Cook for one minute.

Add broth to the pot, stirring until the mixture is well combined. Bring to a boil.

Reduce heat and let the soup simmer for 15-20 minutes or until the soup is thickened and vegetables are tender.

Puree soup using an immersion blender or by transferring the soup to a blender. Blend until smooth.

Return soup to pot. Add heavy cream and stir until combined. Reheat soup over low heat until heated through. Add salt and pepper, to taste.

Serve hot with crusty bread or crackers.
