A fresh and flavorful salad featuring earthy morel mushrooms and tender spinach.

Ingredients
- 8 oz fresh morel mushrooms
- 6 cups fresh baby spinach
- 1 small shallot, thinly sliced
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp honey
- Salt and pepper, to taste
Instructions

Clean and slice the morel mushrooms. Heat a large skillet over medium-high heat and add the mushrooms. Cook for 5-7 minutes until tender.

In a large bowl, combine the cooked morels, baby spinach, and sliced shallot.

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined.
