How To Make Chicken & mushroom spud pies
Chicken and mushrooms. Need we say more? Two protein-packed ingredients coming together for a tasty dish. What’s not to love? Ingredients
- 500g chicken breast, diced
- 200g mushrooms, sliced
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp thyme
- 1 cup chicken broth
- 2 cups mashed potatoes
- Salt and pepper to taste
- 1 sheet of puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 200°C.

In a large pan, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.

Add the diced chicken to the pan and cook until browned on all sides.

Add the sliced mushrooms and thyme to the pan, and cook until mushrooms are tender.

Pour in the chicken broth and simmer for 5 minutes until the mixture thickens slightly. Season with salt and pepper.

Divide the mashed potatoes among 4 individual ovenproof dishes.

Spoon the chicken and mushroom mixture over the mashed potatoes.

Roll out the puff pastry sheet and cut into 4 squares.

Place a square of pastry over each dish, pressing the edges to seal.

Brush the pastry with beaten egg to give it a glossy finish.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
