These skewers are a perfect combination of tender chicken and delicate enoki mushrooms with a savory marinade.

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 package enoki mushrooms, trimmed and separated into small clusters
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper, to taste
- Skewers, soaked in water for 30 minutes
Instructions

In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, salt, and pepper.

Thread the chicken and enoki mushrooms onto the skewers.

Brush the marinade all over the skewers generously and let it marinate for at least 10 minutes.

Preheat the grill to medium-high heat.

Grill the skewers for 5-6 minutes, turning occasionally, until the chicken is cooked through.
