Ingredients

  • 2 medium zucchinis, grated
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • Vegetable oil, for frying

Instructions

  1. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes, then squeeze out any excess moisture.

  2. In a large bowl, combine the grated zucchini, chopped onion, minced garlic, breadcrumbs, Parmesan cheese, beaten eggs, salt, black pepper, dried basil, and dried oregano. Mix well.

  3. Heat vegetable oil in a large skillet over medium heat.

  4. Take a spoonful of the zucchini mixture and drop it into the hot skillet. Flatten it slightly with the back of the spoon. Repeat with the remaining mixture, leaving some space between patties.

  5. Cook the patties for about 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and drain on paper towels.

  6. Serve the zucchini patties warm as an appetizer or as a side dish.
