Ingredients
- 2 large yellow squash, grated
- 1 small onion, grated
- 2 cloves of garlic, minced
- 1/4 cup of all-purpose flour
- 1/4 cup of grated Parmesan cheese
- 2 eggs, beaten
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of vegetable oil
Instructions

In a large bowl, combine the grated yellow squash, grated onion, minced garlic, all-purpose flour, Parmesan cheese, beaten eggs, salt, and black pepper. Mix well.

Heat vegetable oil in a skillet over medium heat.

Using a spoon or ice cream scoop, scoop the squash mixture and drop it onto the hot skillet. Flatten with a spatula to form a patty.

Cook each side for about 4-5 minutes, or until golden brown.

Remove the cooked patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

Repeat the process with the remaining squash mixture until it is all used.
