Ingredients
- 2 cups mixed vegetables (carrots, potatoes, peas, cauliflower, etc.), chopped
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, slit
- 1 inch ginger, grated
- 3 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh cilantro leaves for garnishing
Instructions

Heat oil in a pan and add cumin seeds. Let them crackle.

Add chopped onions and sauté until golden brown.

Add grated ginger and minced garlic. Cook for a minute.

Add tomato puree and cook until the oil separates.

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

Add the chopped vegetables and green chilies. Stir to coat the vegetables with the spice mixture.

Cover the pan and cook for about 10-15 minutes or until the vegetables are tender.

Sprinkle garam masala and mix well.

Garnish with fresh cilantro leaves.

Serve hot with roti or rice.
