Ingredients
- 4 large tomatoes
- 1 cup cooked quinoa
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup shredded cheese (such as cheddar or mozzarella)
- 2 tablespoons chopped fresh basil
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Cut off the tops of the tomatoes and scoop out the seeds and pulp.

In a bowl, combine cooked quinoa, bell peppers, onions, cheese, basil, salt, and pepper.

Fill the hollowed tomatoes with the quinoa mixture.

Place the stuffed tomatoes on a baking dish and bake for 20-25 minutes, or until the tomatoes are tender and the filling is heated through.

Remove from the oven and let cool for a few minutes before serving.
