Ingredients
- 1 butternut squash, peeled, seeded, and cubed
- 1 red onion, sliced
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/2 cup pistachios, chopped
Instructions

Preheat the oven to 400°F (200°C).

In a large mixing bowl, combine the butternut squash, red onion, olive oil, salt, and pepper. Toss well to coat.

Spread the squash and onion mixture evenly on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the squash is tender and slightly caramelized.
