- 2 lbs potatoes, cut into bite-sized pieces
- 1 lb Brussels sprouts, trimmed and halved
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the potatoes and Brussels sprouts with olive oil, garlic, thyme, salt, and pepper until well coated.

Spread the vegetables on a baking sheet in a single layer.
