Ingredients

  • 1 small cauliflower, cut into florets
  • 1 small butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the cauliflower and squash with the olive oil, garlic powder, paprika, salt, and black pepper until well coated.

  3. Spread the vegetables in a single layer on a baking sheet.

  4. Roast in the preheated oven for 25-30 minutes, or until the vegetables are golden brown and tender, stirring once halfway through.

  5. Remove from the oven and garnish with fresh parsley before serving.
