Ingredients

  • 1 small head of cabbage, thinly sliced
  • 4 ounces pancetta, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, cook the pancetta over medium heat until crispy. Remove from pan and set aside, leaving the rendered fat in the skillet.

  2. Add the olive oil to the skillet and heat over medium-high heat. Add the garlic and red pepper flakes and sauté for 1 minute.

  3. Add the cabbage to the skillet and toss to coat it in the rendered fat and oil mixture. Cook for 5-7 minutes, until the cabbage begins to wilt.

  4. Pour in the chicken broth and bring to a simmer. Reduce the heat to low and cover the skillet. Let the cabbage braise for about 10 minutes, or until it is tender.

  5. Season with salt and pepper to taste. Stir in the cooked pancetta. Serve hot, garnished with fresh parsley.
