Ingredients
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 tsp ginger, grated
- 1 tbsp curry powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Salt and pepper to taste
- 1 can coconut milk
- 2 cups mixed vegetables (such as carrots, peas, bell peppers)
- Fresh cilantro, for garnish
Instructions

Heat vegetable oil in a large pan over medium heat. Add the sliced onion and cook until it becomes translucent.

Add the minced garlic and grated ginger to the pan and cook for another minute.

Add the curry powder, cumin powder, coriander powder, turmeric powder, salt, and pepper to the pan. Stir well to coat the onions with the spices.

Pour in the coconut milk and bring it to a simmer.

Add the mixed vegetables to the pan and cook until they are tender, about 10-15 minutes.

Serve the vegetable curry over steamed rice or with naan bread. Garnish with fresh cilantro.
