Ingredients
- 1 cup dried yellow split peas
- 4 cups water
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions

Rinse the dried yellow split peas under cold water until the water runs clear.

In a large pot, combine the rinsed split peas, water, chopped onion, minced garlic, bay leaf, and dried thyme.

Bring the pot to a boil over medium-high heat, then reduce the heat to low and simmer for about 2 hours or until the peas are soft and mushy, stirring occasionally.

Remove the bay leaf and use a blender or immersion blender to puree the mixture until smooth. If the pudding is too thick, you can add a little water or vegetable broth to thin it out.

Season with salt and pepper to taste.
