Ingredients

  • 4 parsnips, grated
  • 1 onion, thinly sliced
  • 2 tbsp harissa paste
  • 100g feta cheese, crumbled
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Place the grated parsnips in a clean kitchen towel and squeeze out any excess moisture.

  2. In a large bowl, combine the grated parsnips, sliced onion, harissa paste, salt, and black pepper. Mix well.

  3. Heat olive oil in a non-stick frying pan over medium heat. Take a handful of the parsnip mixture and shape it into a patty. Place it in the pan and flatten with a spatula. Repeat with the remaining mixture to make four rösti patties.

  4. Cook the rösti patties for about 5 minutes on each side, or until golden brown and crispy.

  5. In a separate pan, heat a tablespoon of olive oil over medium heat. Add the sliced onions and cook until caramelised, about 10 minutes.

  6. Serve the parsnip rösti topped with caramelised onions and crumbled feta cheese.
