Ingredients
- 4 parsnips, grated
- 1 onion, thinly sliced
- 2 tbsp harissa paste
- 100g feta cheese, crumbled
- 2 tbsp olive oil
- Salt and black pepper, to taste
Instructions

Place the grated parsnips in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated parsnips, sliced onion, harissa paste, salt, and black pepper. Mix well.

Heat olive oil in a non-stick frying pan over medium heat. Take a handful of the parsnip mixture and shape it into a patty. Place it in the pan and flatten with a spatula. Repeat with the remaining mixture to make four rösti patties.

Cook the rösti patties for about 5 minutes on each side, or until golden brown and crispy.

In a separate pan, heat a tablespoon of olive oil over medium heat. Add the sliced onions and cook until caramelised, about 10 minutes.

Serve the parsnip rösti topped with caramelised onions and crumbled feta cheese.
