Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper (optional)
- 2 potatoes, peeled and diced
- 1 cup dried red lentils
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté until onions are translucent.

Add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using) to the pot. Stir well to coat the onions and garlic with the spices.

Add the diced potatoes, dried lentils, vegetable broth, and diced tomatoes to the pot. Stir well to combine.

Bring the mixture to a boil, then reduce heat to low and simmer uncovered for about 30 minutes, or until the lentils and potatoes are tender.

Season with salt and pepper to taste.

Serve hot, garnished with fresh cilantro.
